When I have a craving for fresh veggies I always find this recipe the right solution. Super easy to make, healthy and mega delicious ✨
Spring rolls (fresh spring rolls)
8 sheets rice paper (spring roll wrappers)
100 gr glass noodles, cooked
1/4 small red cabbage, shredded
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium carrot, cut into matchsticks
1 cucumber, cut into matchsticks
1 baby lettuce
1 bunch cilantro, roughly chopped
1 bunch mint, roughly chopped
Dipping sauce
50 ml soy sauce
10 ml fish sauce
1/2 tsp red chilli pepper flakes
1/4 lemon, juice
1 clove garlic, minced
Begin with dipping sauce. Mix all the ingredients and set aside.
Add warm water to a large bowl. Dip each rice paper wrapper in water for a few seconds and lay on a cutting board.
On the 1/3 section of the rice paper wrapper closest to you, start layering your fillings. Lay your lettuce, then the veggies & herbs and the noodles.
Fold in the sides and roll the rice paper and the fillings as you would a burrito, making sure the ingredients are tightly packed as you roll.
Before serving, slice each roll in half with a very sharp knife.
