Meatless Monday is here 😊

Today’s recipe is loved by anyone and it is delicious anytime ✨

400 g chickpeas, soaked overnight

1 medium red onion

4 garlic cloves

2 bunches of parsley

½ bunch of coriander

1 tsp cumin

1 tsp all spice

1 tsp chili flakes

1 tsp baking soda

2 tbsp all purpose flour

Salt & pepper, to taste

*vegetable oil for frying

To serve

Hummus – see the recipe on my blog

Salad leaves

Microgreens

Tahini sauce – see the recipe on my blog

Soak the dried chickpeas in water for at least 6 hours, preferably over night.

In a food processor add the chickpeas, onion, parsley, cilantro, garlic, cumin, allspice and chili. Season and mix / pulse until well combined.

Add the flour and baking soda and mix well.

Using an ice cream scoop form the falafel into balls.

Heat the oil in a pan and cook the falafel in batches for 2 minutes or until golden.

Serve with hummus, salad and tahini sauce.

Enjoy!
