Falafel with tahini sauce

Today I felt I wanna continue the arabian inspired meals. So my new recipe is a vegetable goodie served with 2 dipping sauces.

Falafel
250 g dried chickpeas, soaked overnight
1 medium onion
3 bunches of parsley
1 bunch of wild garlic
1 tsp cumin
1 tsp baking soda
1 tbsp all purpose flour
Salt & pepper, to taste

Tahini sauce
100 g tahini
1 clove of garlic, minced
1/2 lemon, juice
1-2 tbsp water
Salt & pepper, to taste

Falafel
Add the drained chickpeas to your food processor, along with all the rest of the ingredients (onion, wild garlic, parsley, cumin).
Pulse the food processor until the mixture resembles the texture of coarse sand.

Add the flour and baking soda and stir together.

Use your hands to form the falafel into balls.
Deep fry the falafel in a pan of oil on medium heat. Heat the oil and cook the falafel in batches for 1-2 minutes or until golden.

Tahini sauce
Put all the ingredients in a blender and pulse until very well combined.

Serve the falafel with tahini sauce and feta dip.
