Meatless Monday is here 😊 Today I’ve chose to cook some delicious falafel, served with creamy tahini sauce and crunchy vegetables. Yummy!✨
400 g chickpeas, soaked overnight
1 medium red onion
4 garlic cloves
2 bunches of parsley
1 tsp cumin
1 tsp chili flakes
1 tsp baking soda
2 tbsp all purpose flour
Salt & pepper, to taste
*vegetable oil for frying
To serve
Salad leaves
Red onion, sliced
Tomatoes, chopped
Radishes, sliced
Green chili peppers
Parsley, chopped

Pitas
Soak the dried chickpeas in water for at least 6 hours, preferably over night.
In a food processor add the chickpeas, onion, parsley, cilantro, garlic, cumin and chili. Season and pulse until well combined. Add the flour and baking soda and mix well.
Form the falafel into balls.
Heat the oil in a pan and cook the falafel in batches until golden.
Serve with pitas, salad, vegetables and tahini sauce.
