Egg and avocado breakfast pizza

Today’s recipe is for those lazy days when the breakfast is, in fact, a satisfying brunch 😊

Flatbread pizza dough – see the recipe on my blog

2 eggs

50 g mozzarella, grated

100 g cheddar, grated

100 g bacon

150 g cherry tomatoes, halved

1 red onion, finely sliced

1 small avocado, chopped

Micro greens

1 tbsp extra virgin olive oil

Salt & pepper, to taste

Preheat oven 250 C and place a pizza stone on a rack in the lower part of your oven.

Divide the dough into 2 balls and flatten each dough into a disc.

Top the dough with the grated cheeses. Divide the bacon, onion and the tomatoes between each pizza and crack the egg in the center of each flatbread.

Bake for 12-15 minutes, then add the avocado bites and microgreens.

Season and drizzle with a little olive oil.

Enjoy!
