Easy mushroom soup

Easy in no time, today’s recipe is about a delicious veggie: mushroom 🍄

700 g mixed mushrooms

1 onion, chopped

3 garlic cloves, chopped

1 l water or vegetable stock

100 ml heavy cream

30 g butter

2 tbsp EVOO

½ bunch of parsley, chopped

Fresh thyme

Salt & pepper, to taste

Heat the butter & oil in a saucepan and cook the onion until starting to soften.

Add the garlic, then the mushrooms and cook for 2 mins, stirring frequently.

Pour the water/stock into the pan and bring to the boil. Add thyme and cook for 10 minutes, then remove from the heat and blend until smooth.

Season, add the cream and serve in bowls garnished with parsley and a drizzle of olive oil.
