6 hard boiled eggs
40 gr mayonnaise
1 tbsp Dijon mustard
1/4 lemon, juice
2 strips bacon cooked crisp & crumbled
10 gr chives,chopped
Salt & pepper, to taste
Put the eggs in a saucepan with water to cover by 4 cm. Bring to boil over high heat. Boil on low heat for 7 minutes. Pour off the hot water and fill the saucepan with cold water.
Peel the eggs and slice off the top of each egg and scoop the yolks into a bowl.
Mash the yolks with a fork and add the mayonnaise, mustard, lemon juice, salt and pepper. Stir until it’s smooth.
Fill each egg white with the yolk mixture. Top with bacon and chives.
