Goodies’ time is here 😊

Today’s recipe is an easy and fun to make dessert. If you have kids, they will surely appreciate each step of this process. At the end, you’ll have moist, lemony and delicious cupcakes.

 

120 g all-purpose flour

100 g sugar

1 tsp baking powder

½ tsp salt

120 g butter, room temperature

2 eggs

100 ml buttermilk

30 ml lemon juice

Buttercream

200 g butter

450 g powdered sugar

2 tbsp whipping cream

1 tbsp blueberries powder

Preheat the oven to 180 C and prepare a muffin tin with papers.

Sift the flour, baking powder and salt into a bowl and set aside.

Cream the butter and sugar in a bowl. Add the eggs one at a time, then mix in the lemon juice and buttermilk.

On low speed, add the flour and mix until just combined.

Divide the batter between cupcake papers and bake for 20-25 min or until a toothpick inserted in the center comes out clean. Let them cool completely.

Buttercream

Cream the butter, then add the sugar and mix for 7 – 10 minutes. Add the cream and beat until you have a fluffy consistency.

Put the buttercream in a piping bag fitted with a tip of your choice and decorate the cupcakes as you like.

Optional step – Divide the buttercream in half. In one half add the blueberries powder and mix until well incorporated.

Using a large piece of plastic wrap, spread each color in a line, then roll the colors into a log, then place it into the piping bag fitted with the tip of choice and decorate as you like.
