Directions
There are days when I am craving for something crispy and fried. Today is one of these days 🙂
200 g tofu, halved lengthwise
1 egg, lightly beaten
50 g flour
50 g Panko
2 tsp garlic powder
1 tsp chili flakes
2 tbsp vegetable oil
Salt & pepper, to taste
To serve
1 medium tomato, sliced
¼ red cabbage, finely sliced
3 spring onions, finely chopped
Yogurt dressing (Greek yogurt, garlic, lemon juice, salt&pepper)
Prepare 3 bowls for coating the tofu:
Mix the flour and garlic powder
Mix the egg with chili flakes and season
Panko crumbs
One by one, coat the tofu pieces in each mixture. Lightly press to make the breadcrumbs stick.
Heat the oil in a pan and cook the tofu for 5-7 minutes or until golden and crisps.
Divide the veggies between plates, top with tofu and drizzle with yogurt dressing.
