As usual, I am starting the week with a meatless meal. Today’s recipe is super easy to make, healthy and delicious ✨
100 g couscous
200 g firm tofu, diced
150 edamame, frozen
150 g green beans, frozen
100 g peas, frozen
3 garlic cloves, minced
Radish sprouts
30 g peanuts, chopped
1 tbsp sesame seeds
4 tbsp soy sauce
2 tbsp sesame oil
1 tsp oil
1/2 lemon, juice
Salt & pepper, to taste
Put the couscous in a bowl and add 200 ml hot water. Cover the bowl and wait 5-7 minutes. before serving add olive oil, lemon juice and salt & pepper.
Bring a pot with salted water to boil. Add peas, green beans and edamame and cook for 2 – 3 minutes.
Heat the sesame oil in a pan and cook the tofu cubes until crisp, 3 – 4 minutes. Add garlic and cook for 1 more minute.
Turn off the heat and add the veggies and soy sauce and stir to combine.
Divide couscous between serving bowls and add the tofu and veggies.
Season to taste and garnish with peanuts, radish sprouts and sesame seeds.
