Today’s recipe may require some time, but the results is sticky, buttery and fancy. ✨
Dough
450 g all purpose flour
7 g dry yeast
100 g sugar
120 ml milk, room temperature
3 eggs, room temperature
150 g butter (diced), room temperature
Filling
75 g butter, room temperature
120 g sugar
1 tsp cinnamon
1 egg, beaten, for egg wash
Glaze – 1 tbsp honey + 1 tsp water
Put the flour, sugar and yeast in the bowl of a stand mixer and stir to combine. Pour the milk and beaten eggs and knead for 5 minutes.
Add the butter, a dice at a time and make sure it is well incorporated. Knead for 15 minutes or until the dough is smooth.
Cover and let it proof for 1-2 hours or until doubled in size.
In a bowl, mix the butter, sugar and cinnamon until well combined and se aside.
*Preheat the oven to 180 C and prepare a muffin pan
Roll the dough into a rectangle, then spread the filling all over. Fold the dough in 3, then cut in 12 equal strips.
Cut each strip into 3 parts, leaving one side intact. Braid the strips to create a single braid.
Roll each braid into a ball and place it in the muffin pan.
Cover with plastic wrap and leave to proof for another 45-60 minutes.
Brush them with the egg and bake for 25-30 minutes or until golden.
Brush the baked buns with the syrup/glaze while still hot.
