A special weekend deserves a super easy classic recipe with a twist 😉
Chocolate truffles, with a twist
120 gr dates
70 gr peanuts, roasted and unsalted
75 gr cocos cream
30 gr cacao powder
70 gr butter, at room temperature, unsalted
40 gr chopped peanuts. for topping
Combine all the ingredients (except the peanuts for topping) in a food processor and blend until the mixture starts to clump.
Using 2 teaspoons scoop the filling and then drop it into the chopped peanuts. Press the peanuts into the dough and use your hands to form the truffle into a ball.
Freeze the truffles for at least an hour.
The coating
200 gr good quality chocolate
20 gr butter
Melt the chocolate in a saucepan on low heat and stir constantly. Once the mixture is smooth add the butter and remove from heat.
Dip each truffle in the melted chocolate using a spoon and place on the baking sheet. Repeat for all truffles.
Chill for about 15-20 mins until chocolate is firm.
