Chocolate tartlets

Goodies time is here 😊

Today’s recipe is a dream dessert for every chocolate lover. Its taste deserves any little effort 🍫👌

 

Shortcrust pastry

125 g all purpose flour

60 g icing sugar

40 g cocoa powder

60 g butter

1 egg

Caramel sauce

125 g sugar

125 ml whipping cream

40 g butter

Chocolate ganache

200 ml whipping cream

200 g chocolate, chopped

Shortcrust pastry

Using your mixer bowl, sift the flour, sugar and cocoa then add the butter and mix until breadcrumbs consistency. Add the egg and mix just until smooth. Cover the dough in plastic wrap and chill for at least 30 minutes.

Preheat the oven to 175 C.

Lightly flour your working space and roll the dough to 5 mm thickness and transfer it to a tart pan (press it in and trim the edges)

Blind bake for 15 minutes or until the sides are set, then remove the beans and baking paper and continue baking for 15 minutes more.

Caramel sauce

On low heat, melt the sugar in a saucepan. Do not stir! As soon as it reaches the golden color, add the butter and, gradually, the whipping cream and stir until smooth. Remove from the heat.

Chocolate ganache

In a small pan, heat the cream then pour it over chopped chocolate and set aside for 1 minute. Mix until the chocolate is fully dissolved.

Assembly

Pour the warm caramel sauce into the tart shells, let it sit for few minutes, then add the ganache and chill the tarts for 2 hours. Decorate as you like.
