Let the magic of the weekend begin with these easy-to-make and delicious chocolate muffins!

Muffins

3 Eggs
150 g sugar
250 g all purpose flour
10 gr baking powder
100 ml melted butter
100 ml coffee
1 tsp vanilla
75 g chopped chocolate or chocolate flakes

Chocolate cream
250 g mascarpone cheese
100 g Nutella

Heat the oven to 180 ° C and place the special muffin papers in the tray.

For the dough, mix the eggs, butter, vanilla and sugar, at high speed, 5-6 minutes or until you have a foam. Add the coffee and mix. Add sifted flour with baking powder and mix the dough. At the end add the chopped chocolate.

Use a tablespoon and divide the dough equally in the 12 forms. Bake the muffins for 20-25 minutes or until they pass the toothpick test. Let them cool very well before adding the cream.

Chocolate cream – mix mascarpone and Nutella with a mixer at medium speed,  for 4-5 minutes or until you have a fluffy cream. Leave the cream in the fridge until use.

Put the cream in a posh and decorate each muffin. Sprinkle on top desired decoration (chocolate flakes, ground nuts, chocolate syrup etc)
