Chickpea burger in pita bread

Meatless Monday is here! 😊

Today I replaced the burger bunnies with pita bread and I prepared the burgers with some Middle east spice. The result is delicious! ✨

1 can chickpeas, drained and rinsed

2 tbsp tahini

2 garlic cloves, minced

1 tsp cumin

1 tsp chili flakes

½ tsp cinnamon

1 medium red onion, finely chopped

1 tbsp chopped parsley

1 tbsp breadcrumbs

Salt & pepper, to taste

1 tbsp extra virgin olive oil

To serve

150 g tzatziki sauce

4-5 cherry tomatoes, chopped

1 small red onion, sliced

¼ red cabbage, chopped

½ bunch of coriander, roughly chopped

Pita breads

In a food processor pulse until combined the chickpeas, tahini, garlic, cumin, chili flakes, cinnamon and parsley.

Add the chopped red onion, breadcrumbs, season and stir until well combined, then form 4 burgers.

Heat the oil in a pan and cook the burgers for 3-5 minutes on each side or until golden and crisp.

Serve the warm burgers in the pita breads with the tzatziki, tomatoes, onion, red cabbage and coriander.
