Today’s recipe is, again, about zucchini, but with different taste and texture ✨
3 medium zucchini, grated
4 garlic cloves, grated
2 eggs, lightly beaten
1 tbsp all purpose flour
1 tbsp bread crumbs
50 g Parmesan, grated
100 g cheddar, grated
½ bunch of dill, chopped
½ bunch of parsley, chopped
Salt & pepper, to taste
Preheat the oven to 200 C and prepare a baking pan with parchment paper.
Grate the zucchini and use your hands or a clean towel to squeeze out as much liquid as possible.
In a bowl mix the zucchini, garlic, dill, parsley, eggs, flour, bread crumbs, cheeses and season.
Using your hands, roll the mixture into small balls. Bake 20-25 minutes or until golden brown. Serve with your preferred dipping sauce.
