Today I used some leftover rice and prepared rice balls/arancini. Even the original recipe indicate the use of risotto, these beauties are equal delicious✨
200 g leftover rice
60 g Parmesan, grated
150 g mini mozzarella
2 eggs
100 g all purpose flour
100 g panko
Chili flakes
Salt & pepper, to taste
100 ml vegetable oil, for frying
Salad leaves/microgreens
In a bowl, mix the rice, Parmesan, 1 egg and season.
Form each sphere by taking a some rice, then adding a piece of mozzarella and enclosing the filling completely. Repeat the same with the rest of the rice mixture.
Heat the oil in a pan.
Prepare 3 bowls with: flour, remaining egg (beaten) and panko. Roll each sphere in the flour, then egg then the panko.
Fry the arancini until the panko is golden.
Serve with salad or microgreens.
