Cheddar cornbread

Today’s recipe is a fluffy, moist and cheesy cornbread, indulgence type ✨

150 g cornmeal

150 g all purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp sugar

3 medium eggs

240 ml buttermilk

60 ml vegetable oil

100 g cheddar cheese, grated

2 spring onions, finely chopped

Preheat the oven to 200 C and prepare a baking pan with parchment paper.

In a large bowl whisk the cornmeal, flour, baking powder, baking soda, sugar and salt.

In a bowl mix the eggs, buttermilk and oil until combined.

Pour the wet ingredients into the dry ingredients and whisk until combined. Gently, add and mix the cheese and the green onions.

Pour batter into the prepared pan and bake for 30-35 minutes or until golden brown.

Allow to cool before slicing.
