Chanterelle mushrooms are delicate, tasty and delicious and go very well with cheese.
Today’s recipe is very simple to make and the result is impressive
300 g chanterelle
50 g butter
4 quail eggs, soft boiled
100 ml whipping cream, chilled
200 g goat cheese
Microgreens or your fav salad leaves
1 tsp chili flakes
Salt & pepper, to taste
Add the whipping cream to a mixer and mix until stiff peaks are reached. Add the goat cheese and mix for 30 seconds or until the goat cheese/mixture is creamy. Season and set aside.
Heat a pan and cook the chanterelles in butter, then season with salt and pepper. Keep the butter from the pan.
Divide the goat cheese mousse between plates and top with eggs, mushrooms and microgreens. Sprinkle with chili flakes and drizzle the remaining butter.
