I know autumn is here when I am thinking about cauliflower.
Today’s recipe combine this veggie with kale and egg. Yummm! ✨
1 onion , finely chopped
3 garlic cloves, chopped
1 small cauliflower, cut in small florets
1 zucchini, chopped
300 g kale, chopped
½ red chili, finely chopped
2 eggs
1 tsp smoked paprika
Microgreens
1 tbsp EVOO
Salt & pepper, to taste
Heat the oil in a pan and add onion. Cook for 4 mins or until the onion is soft and golden. Add the garlic and chili and continue cooking until fragrant.
Add the cauliflower, zucchini and 50 ml water, cover and cook for 5 minutes.
Stir in the kale, paprika and season. Continue cooking for another 5 mins or until the kale is tender.
Meanwhile, fry the eggs and serve on top with microgreens.
