This recipe is so simple to make that you don’t even know when the plate appears in front of you. And the taste, the taste is divine ✨🌟
Carrot soup with ginger, cinnamon and turmeric
2 carrots
1 onion
2 small potatoes
2 cm of ginger
1 pinch cinnamon
1 tsp turmeric
2 tbsp extra virgin olive oil
2 tsp lemon juice
Salt & pepper to taste
Prepare a pot and heat the oil. Add the chopped onion and ginger and cook them for about five minutes, until soft. Cut roughly all the vegetables, put them in the pot and add enough water to cover them.
Let them boil for 20 – 30 minutes. Take the pot off the heat and let cool slightly. Transfer to a blender, add turmeric, cinnamon, lemon juice and blend until smooth. Taste and adjust seasonings.
It can be served with yogurt / cream, pumpkin seeds or fresh greens.
