Meatless Monday is here 😊

I have a very good friend who brings me a lot of fresh vegetables from his garden.
He brought me some cabbage and, today, I cooked a delicious and super easy to make meal with this crunchy veggie.

1/2 cabbage, chopped

2 red onions, chopped

3 garlic cloves, chopped

1 carrot, chopped

1 red bell pepper, chopped

1 tomato, chopped

1 tsp smoked paprika

1 tsp thyme

2 bay leaves

1 tsp tomato puree

350 ml water

1 bunch dill, chopped

2 tbsp vegetable oil

Salt & pepper, to taste

Heat the oil in a pan and add the onions, carrot and pepper. Cook for 5-7 minutes or until tender. Add garlic and cook until fragrant.

Add the cabbage, paprika, thyme, tomato and cook for 5 minutes, stirring often. Add the tomato puree, bay leaves and water and continue cooking for 10 – 15 minutes or until the cabbage is tender.

Remove from the heat, season and add the fresh dill. Serve with bread or polenta.
