Today’s recipe is a fabulous cake, very good looking, fruity and fresh 🍓

400 g all purpose flour
300 g sugar
200 g butter
4 medium eggs
1 tsp baking powder
1/2 tsp baking soda
240 ml buttermilk

Cream cheese frosting
350 g cream cheese
115 g unsalted butter, at room temperature
460 g confectioners sugar
1 lime, juice and zest

250 g strawberries
15 g mint leaves

Preheat the oven to 180 C and prepare with parchment paper 3 cake pans (18 cm diameter).

Whisk together flour, baking soda, baking powder in a bowl.

Beat butter and sugar until light and fluffy, about 2 – 3 minutes. Add eggs, one at a time, beating well after each addition. Add the flour to the mixture alternately with buttermilk. Divide batter among prepared pans.

Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely.

Meantime, prepare the cream cheese frosting.
Beat cream cheese and butter until fluffy, about 2 minutes.
Gradually add the sugar and beat until smooth. Add the lime zest and juice and beat to incorporate well,
Keep the frosting in the fridge.

Place one layer on a plate and frost top with 1/3 of cream cheese frosting. Repeat two more times. Chill until frosting is set, minimum 3 hours. Top with strawberries just before serving.
