Burrata with snow peas and quail eggs

Today I’ve prepared one of the simplest salad, yet full of delicious tastes and textures. It is ready in no time and it looks very precious 😊

 

200 g burrata

5 quail eggs, boiled, halved

250 g peas

100 g snow peas

2 tsp lemon, juice

1 tsp mint

1 tsp chili flakes

Microgreens or your favorite salad leaves

I tbsp EVOO

Salt & pepper, to taste

Bring a pan of salted water to boil and add the peas and blanch for 1 minute. Add the snow peas and blanch 1 minute more.

Drain and refresh in very cold water.

Keep few peas, then add the rest of it into a blender, together with half of lemon juice, mint and half of the oil. Season and blend until smooth.

Divide the pea puree between plates, add the microgreens, blanched snow peas and peas, burrata and eggs. Season, sprinkle some chili flakes and drizzle with the rest of the oil and lemon juice.
