Today’s recipe is a super easy-to-make indulgence meal. I received from my dearest friend, probably, the last zucchini flowers this year and I had to use them properly 😊
200 g burrata
200 g frozen peas
200 g baby spinach
20 g fresh mint
20 g butter
50 g edamame
4 baby zucchini with flowers
Fresh basil
1 tbsp EVOO
1 tsp chili flakes
Salt & pepper, to taste
Bring a pan of water to the boil and add the peas. Blanch for 1-2 minutes and add the spinach; continue cooking for 30 -45 seconds.
Drain and place the peas, spinach, mint and butter in a bowl and use a stick blender to blend until a smooth puree. Season to taste.
Divide the puree between plates, add burrata, zucchini, basil and edamame. Sprinkle some chili flakes and drizzle with oil.
