Burrata with baked tomatoes

2 burrata

Puff pastry

200 g cherry tomatoes

3 garlic cloves, grated

Baby arugula

Radish sprouts

Basil leaves

1 egg yolk, lightly beaten

2 tbsp EVOO

Salt & pepper, to taste

Preheat the oven to 200°C and prepare a baking tray with parchment paper.

Cut the pastry in rectangles (to fit the burrata piece) and brush them with egg yolk.

In a bowl combine 1 tbsp oil, garlic and salt & pepper. Place the tomatoes in a bowl and toss to combine.

Bake the pastry and tomatoes in the same baking tray for 20-25 minutes or until the pastry is golden brown.

Arrange the pastry in plates, top with the burrata and tomatoes, green leaves and drizzle with the remaining oil. Season and serve.
