Today’s recipe is a classic with my twist and it is delicious.
Pizza dough (see the recipe on my blog)
200 g burrata
100 g mozzarella, grated
1 handful pea shoots (microgreens) and fresh basil
1 tsp chili flakes
1 tbsp EVOO, for drizzling
Pea and kale pesto
100 g peas, blanched (boiled)
100 g kale, fresh
2 garlic cloves
1 tbsp fresh basil
1 tbsp fresh mint
25 g walnuts
40 g Parmesan
1 tbsp EVOO
Salt & pepper, to taste
Preheat the oven to 250 C and place a pizza stone on a rack in the lower part of your oven.
Put all the pesto’s ingredients in a blender and blend until smooth.
Season and set aside
Top the dough with mozzarella and bake 7-10 minutes, or until the dough is cooked and the cheese is melted.
Spread the pea pesto all over the pizza.
Top with burrata, pea shoots, chili flakes, basil and drizzle with oil.
