Today’s recipe is a festive cake, full of summer fruits, excellent to be enjoyed in summer days 🌞✨
350 g all-purpose flour
200 g unsalted butter
300 g sugar
3 eggs, room temperature
320 ml buttermilk
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 teaspoon vanilla
100 g white chocolate, grated
100 g blueberries
Frosting:
200 g white chocolate, chopped
100 ml whipping cream
100 g cherries
100 g strawberries
Preheat oven to 180°C and prepare (grease) a bundt pan.
In a large bowl, beat butter until creamy, then add sugar, vanilla and beat until fluffy.
Add eggs one at a time, beating well after each addition.
Sift flour, baking powder, baking soda and salt together then fold into butter-eggs mixture alternately with buttermilk.
Mix blueberries with 1 tbsp flour and add to the batter, together with white chocolate and mix with a spatula. Pour the batter into the bundt pan and bake about 45-50 minutes, or until a toothpick inserted in center comes out clean.
Let it cool for 10 minutes then remove from the bundt pan.
Frosting
Heat cream until the boiling point, remove from the heat and add the chocolate.
Let stand for a minute and whisk until smooth.
Let the ganache cool until it thickens and pour over cold cake.
Decorate with cherries and strawberries and keep it in the fridge.
