Broccoli cheddar soup

If you are a cheese lover, this soup is a wonder.
Easy to prepare, creamy, cheesy and ready in no-time, you’ll just want another bowl 🥦🧀😊

 

500 g broccoli, chopped (including stalks)

1 onion, chopped

2 small carrots, grated

2 garlic cloves, chopped

50 g butter

50 g flour

500 ml chicken stock

200 ml milk

200 g cheddar, grated

Salt & pepper, to taste

Heat the butter in a pan and add the chopped stalks of broccoli and onion and cook until soft, about 4-5 minutes. Add garlic and cook until fragrant.

Stir in the flour and cook for 1 minute, then pour in the stock, stirring constantly for 2 minutes. Add the milk, then broccoli and carrots, then simmer for 10 -15 minutes.

Add the grated cheese, season, mix well and serve.
