Blueberry sandwich cookies

Goodies’ time is here 😊

Today’s recipe is a super easy and fun to make one ✨

240 g all purpose flour

30 g cornstarch

110 g butter, room temperature

100 g sugar

1 egg

¼ tsp salt

2 tsp blueberry powder

Buttercream filling

80 g butter, room temperature

160 g confectioners/powder sugar

½ tsp vanilla

Preheat the oven to 180 C and prepare a baking tray with parchment paper.

Sift the flour, cornstarch, blueberry powder and salt.

Using a mixer beat butter and sugar until fluffy and cream, then add the egg and continue beating.

Add the flour and mix until everything is well incorporated.

Wrap the dough in plastic and chill for at least 30 minutes.

Roll out the dough and cut the cookie with your favorite cookie cutter.

Bake for 8 – 12 minutes, then let cool.

For buttercream filling, beat the ingredients until smooth.

Spread the filling on half of the cookies, then top with remaining half.
