Beetroot salad with goat cheese

Today I wanted a simple meal, so I’ve made a simple salad with beetroot and cheese. It might be easy to make but it is very healthy and delicious ✨

2 medium beets
60 g goat cheese, crumbled
1 tbsp dill, chopped
Microgreens
30 g walnuts, chopped
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp honey
Salt & pepper, to taste

Preheat the oven to 200°C . Cut off any tops and wash the root clean. Wrap beets in aluminum foil, place on a baking sheet and cook until very tender, about 60 -75 minutes. Let cool slightly, then peel and slice in quarters.

Whisk oil, vinegar, honey, salt & pepper in a large bowl. Add the beets and toss to coat. Serve sprinkled with goat cheese, walnuts, microgreens and dill.
