Beetroot crepes with goat cheese mousse

Today’s recipe is about indulgence moments 😊

It maybe look fancy, but it is super simple to make and it is delicious. And it can be enjoyed for lunch or dinner. Or maybe, for a late brunch.✨

 

1 beetroot, cooked (100 g)

80 g all purpose flour

1 egg, large

150 ml milk

1 tsp salt

1 tbsp vegetable oil

Salt & pepper, to taste

Filling

150 g goat cheese mousse (goat cheese + whipping cream + salt&pepper)

1 avocado, sliced

25 g pine nuts

1 red onion, sliced

Microgreens

Using a blender, chop the beetroot until a fine puree.

In a bowl mix the eggs, milk, flour, beetroot puree and salt until you have a smooth batter.

Heat some oil in a non-stick pan and add a thin layer of batter and cook for 1-2 minutes on each side.

Continue until you have no batter left.

Spread the filling on each crepe, season and serve.

Enjoy!
