Beetroot burger with spinach buns

Today I’ve used colorful and healthy veggies to build a delicious burger ✨🍔

500 g beetroot, quartered

1 red onion, finely chopped

3 garlic cloves, grated

1 egg, lightly beaten

50 g cooked quinoa

2 tbsp breadcrumbs

1 tbsp all purpose flour

½ bunch parsley, finely chopped

1 tsp smoked paprika

1 tsp chili flakes

2 tbsp EVOO

Salt & pepper, to taste

Spinach buns

Horseradish sauce

Salad leaves

Tomatoes

Cucumber

Preheat the oven to 200 C an prepare a baking tray with parchment paper.

Place the beetroot on the tray, sprinkle the paprika, chili flakes, drizzle with half of the oil and roast for 30 minutes.

Place the beets, onion, garlic and parsley in a food processor and pulse to combine. Add the egg, breadcrumbs, flour, quinoa, season and mix well.

Shape the burgers and chill for 30 minutes.

Heat the remaining oil in a pan and cook the burgers, 2-3 minutes on each side.

Toast the buns and build your burger with horseradish sauce, veggies and salad leaves.
