Avocado shrimp bowl

Today’s recipe is one of the simplest, quickest and delicious meal 😊

 

1 avocado, sliced

200 g cherry tomatoes, halved

1 red onion, sliced

1 cucumber, ribbons

100 g radishes, chopped

2 spring onions, finely chopped

250 g shrimp

250 g cooked rice

1 tsp garlic powder

1 tsp chili flakes

1 lime, juice

1 tbsp EVOO

Microgreens

In a bowl, mix garlic powder, chili, lime juice and oil, then add shrimp and toss until coated.

Heat a nonstick pan and cook shrimp until pink, then set aside.

Divide the rice between plates, add avocado, cherry, onion, cucumber, radishes, microgreens and shrimp. Season, drizzle with extra oil and serve with lime wedges.
