This recipe is so delicious that I couldn’t stop eating when I was supposed to 🙂
And it is ready in 15 minutes ✨

Avocado pasta

2 ripe avocados, seeded and peeled
1/2 lemon, juice
3 garlic cloves
200 g spaghetti
2 tbsp olive oil
75 g peanuts, roughly chopped
75 g grated parmesan
50 g sun dried tomatoes, chopped
Microgreens or your favorite aromatic plant
Salt & pepper, to taste

Begin with avocado sauce – put the avocado into a blender with the lemon juice, 2 tbsp of the olive oil, the garlic and mix until smooth. Season and set aside.

Cook the pasta in boiling salted water according to the pack instructions. Drain well, reserving 1/4 cup of the cooking water.

Add the avocado sauce and toss gently to combine, adding a bit of the reserved pasta water as needed. Taste and season.

Divide the pasta among 2 plates, then add the nuts, sun dried tomatoes and parmesan. Sprinkle with microgreens.
