Avocado on toast

There are days when I crave for avocado, so today I indulge myself with avocado in 3 ways. Super easy to prepare, these beauties are for every taste 🥑✨

 

4 avocado – 2 sliced + 2 chopped

100 g cream cheese

2 eggs, hard boiled, quartered

100 g cherry tomatoes

2 garlic cloves

1 lemon, juice

2 tbsp EVOO

30 g arugula

Fresh basil

Radish shoots

2 tsp chili flakes

Salt & pepper, to taste

6 bread slices

Using a blender, chop 2 avocados with 1 garlic clove, 1-2 tsp lemon juice, 1 tsp EVOO salt & pepper.

Heat 1 tsp of oil in a pan and add the other garlic clove, chopped, and tomatoes. Cook briefly for 1-2 minutes or until slightly soft. Set aside.

Avo & cheery

Spread cheese on the bread slice, add avocado mixture, top with cheery and basil. Season and serve.

Spread cheese on the bread slice, add some arugula, top with sliced avocado. Season, sprinkle with chili flakes, drizzle with some oil and add radish shoots.

Spread cheese on the bread slice, add avocado mixture, top with arugula and eggs. Season, sprinkle with chili flakes and serve.
