Sometimes, I fall in love with one ingredient and add it to all my recipes. The beautiful avocado is in my focus these days.
I’ve made a simple and delicious salad with few ingredients and avocado. And it was magical! 🌟💫
Avocado and shrimps salad
1 red onion
1 green onion
1 small cucumber
Half of a lemon juice
1 can of red beans
1 avocado
200 g shrimps
3 cloves Garlic
Half of a chilli pepper
1 bunch of parsley
Mixed salad leafs or microplants
Salt & pepper to taste
Olive oil
In a bowl add chopped red onion and green onion, season with salt and pepper, add olive oil, lemon juice and mix.
Drain the red beans from the can, add it to the salad bowl along with the diced avocado, cucumber and parsley.
In a pan, add olive oil and finely chopped garlic cloves. Leave it on the heat for 1-2 minutes, then add the chopped chilli pepper, mix and add the shrimps. Season with pepper, leave on the heat for another 2-3 minutes, stirring constantly.
Add the shrimps to the salad bowl along with salad leafs and serve.
