Asparagus with poached eggs

If you are an asparagus fan, you will love this recipe, thanks to its delicious taste. And it is ready in 10 minutes 🙂

400 g asparagus, trimmed
2 eggs
2 cloves of garlic, minced
2 sundried tomatoes, finely chopped
40 g salted peanuts, finely chopped
1 tbsp olive oil
1 tbsp vinegar
Salt & pepper, to taste

In a pan heat the oil over medium heat. Add garlic and cook for 1 minute. Add asparagus, cook 3-4 minutes or until crisp-tender, turning occasionally.

Bring a pot of water to a boil, then reduce to simmer. Add the vinegar.
Crack the egg in a small bowl. Pour the egg in the water.
Cook for 2-3 minutes, then remove the egg with a slotted spoon and drain it on kitchen paper.

Put the eggs over the cooked asparagus, season and top with sundried tomatoes and peanuts.
