Even though today is a special day, anyone can cook meatless, delicious and beautiful meals. Today’s recipe is one of them 😉
200 g puff pastry, cut into squares
200 g asparagus, chopped
75 g peas
2 spring onions, chopped
125 g mozzarella
2 eggs, beaten
150 g sour cream
1 tsp chili flakes
Salt & pepper, to taste
1 egg, beaten
Microgreens or your fav salad leaves
2 asparagus, ribbons
Preheat the oven to 220 C and prepare 4 tartlet pans with parchment paper.
In a bowl, mix the eggs with sour cream, salt & pepper and chili flakes.
Gently put the puff pastry into prepared tartlet pans, then divide the asparagus, peas, mozzarella and onions between them. Spread the sour cream mixture and brush the edges with egg.
Bake for 20 minutes or until golden. Serve with microgreens and shaved asparagus (seasoned).
