Asparagus tart

Meatless Monday brought me quite an appetite for asparagus 🥰
Today’s recipe is a creamy, cheesy tart with asparagus and tomatoes


Puff pastry, chilled, store bought
1 bunch of asparagus, trimmed
250 g mascarpone
50 ml milk
2 eggs + 1 egg yolk
2 garlic cloves, grated
1/2 bunch of dill, chopped
2 spring onions, chopped
8 cherry tomatoes, quartered
Parmigiano-Reggiano, shaved
Salt & pepper, to taste

Preheat the oven to 200°C.

Stir together mascarpone, milk, parsley, garlic, 2 eggs (lightly beaten) and season to taste.

Place puff pastry on a prepared baking sheet.
Spread cheese mixture, leaving a small border. Arrange asparagus and tomatoes over mascarpone mixture. Lightly brush the pastry sheet with egg yolk
Bake pastry until is golden and crisp, 25 – 30 minutes.

Sprinkle it with Parmesan cheese.
