Asparagus gnocchi

One of the easiest and delicious meal is a buttery gnocchi dish with veggies. Today’s recipe is a springlike combo between asparagus, butter and gnocchi.

 

400 g gnocchi

300 g asparagus, chopped

4 garlic cloves, sliced

Fresh basil, leaves

40 g butter

1 tbsp EVOO

Salt & pepper, to taste

Bring a saucepan of salted water to boil and add gnocchi and cook for 2 minutes or until they float.

Heat the butter and oil in a pan and add the garlic and asparagus and cook for 1 minute, then add the gnocchi and continue cooking for 3 minutes or until golden.

(*you can fry the basil leaves for 30 seconds or until crisp)

Divide between plates, season and serve.
