Asparagus, eggs and whipped feta salad

Today’s recipe is a healthy, springy and super easy to make salad. With different textures, you will enjoy every bite.

 

400 g asparagus, trimmed

300 g potatoes, boiled

200 g peas, frozen

2 green onions, finely chopped

1 small cucumber, ribbons

5-6 radishes, halved

2 eggs, boiled, halved

Salad leaves

250 g whipped feta (feta + Greek yogurt + salt&pepper + EVOO)

1 tbsp EVOO

1 tsp chili flakes

Salt & pepper, to taste

Bring a pot of salted water to boil, add asparagus and peas and cook for 2-3 minutes. Drain and refresh under cold water.

Fill a small pot with cold water, add the potatoes, bring to boil and cook until tender, about 10-15 minutes.

In a bowl, add all the veggies, season, drizzle with oil and toss gently.

*if you like, you can add lemon juice in this step.

Divide the whipped feta between plates, add the veggies, top with eggs and salad leaves, sprinkle with chili flakes and serve.
