Asparagus bowl

It seems that Thursday became the Bowl day recipe 🥗
Today I had some asparagus and I had to use it, so here it is the new Buddha bowl mix.


100 g quinoa, cooked

100 g asparagus, chopped

200 g frozen peas

100 g snow peas

2 avocado, sliced

1 small cucumber, ribbons

Microgreens or your favorite salad leaves

1 tbsp sesame seeds

1/2 lemon, juice

1 tbsp EVOO

Salt & pepper

Bring a pot of salted water to boil, add the frozen peas and cook for 2 minutes, then add the asparagus, continue cooking for 2 minutes more and finally add the snow peas and cook for 30-45 seconds.

Drain and refresh under cold water to stop cooking.

Divide the quinoa and veggies between plates, season and drizzle with oil and lemon juice and sprinkle with sesame seeds.
