I wanna enjoy as much as possible the wild garlic season so today I mixed two of my fav greens and the result is super delish. And is ready in no time ✨
300 g asparagus, roughly chopped
150 g wild garlic
1 small onion, roughly chopped
1 medium potato, diced
1 tbsp vegetable oil
1 l vegetable stock or water
20 gr peanuts, finely chopped
Salt & pepper, to taste
Cook onion in oil in a pot stirring until softened.
Add asparagus and potato pieces and cook for about 3 minutes. Keep 3-4 asparagus tips for garnish.
Add the stock and simmer until the veggies are very tender, about 10-15 minutes.
In the last 3 minutes add the wild garlic leaves.
Puree soup with an immersion blender until smooth and season.
Garnish with asparagus tips and chopped peanuts.
