This recipe is one of the easiest, basically all you have to do is boil the rice and chop some veggies 🙂

Vegetarian taco bowl

100 gr basmati rice
100 gr cherry tomatoes, quarters
2 avocado, slices
1/4 small red cabbage, shredded
2 medium radishes, slices
1/2 bunch coriander, roughly chopped
1 lime
1/2 red chilli pepper
100 gr soft silken tofu, ready to eat
Salt & pepper, to taste

In a large saucepan add one measure rice and 2 measures water. Cook rice according to package instructions; set aside.

Divide rice among bowls. Top with tofu, tomatoes, cabbage, avocado, radishes, chilli and cilantro. Serve with lime wedges for squeezing over.
